AUTHENTIC paella on the move
Paella comes from the south east of Spain, a region known as Levante due to the famous strong wind that lashes its coast. Contrary to popular belief, paella is almost exclusively cooked in this region, apart from Madrid and Barcelona.
La Levantina respects the tradition of authentic paella. We use the best rice, a variety called Bomba, which was created specifically for making quality paellas. Our spices are typically used in all the best paellas, for example sweet Spanish La Vera paprika and dried Ñora peppers.
A well cooked paella should have intense flavour and the rice grains should be loose.
